Deep Green – Drilling Pistachio Eau de Vie
I made a drink with homemade pistachio orgeat a while back. When chatting with Torben about it, he suggested a Mai Tai variation with white overproof white rum and pistachio eau de vie.
The pistachio eau de vie from Drilling. They use pistachios from Persia and macerate them in neutral grain alcohol. Apart from that, Torben suggested to use a clear curacao instead of the one with cognac.
Quite the powerful drink
For the rum I used the white overproof version from Worthy Park. This meant that the resulting drink was quite strong and I reduced the initial amount of 5 cl to 4,5 cl. Obviously, I used my homemade pistachio orgeat instead the regular almond flavoured version.
1,5 cl Drilling Pistachio Eau de Vie
1,5 cl Giffard Curaçao Triple Sec
3 cl Lime Juice
2,25 cl Homemade Pistachio Orgeat**

When sipping the ‘Deep Green’ you get all the core elements of a Mai Tai. Yet, everything also slightly tastes different, except from the lime juice perhaps. The rum flavour has that Jamaican funk, but without any barrel influences. Furthermore, the nuttiness of the drink as well as the colour shifts towards ‘greener’ pistachio notes. Afterall, this means that this is a great Mai Tai variation and a welcome change from the regular taste.
