Home Bar Awards 04/22 – Because the Night

The first regular Home Bar Awards Challenge in 2022 is about Ramos Gin Fizz Reels. – I have to admit that I am rarely mixing a Ramos Gin Fizz, not because I do not like them, but because they are quite labour intensive. Nevertheless, I came up with a variation inspired by exotic spices.

 


The Ramos Gin Fizz variation I came up with for the Home Bar Awards Challenge revolves around exotic spices. Besides a Sumach infused Armagnac, I also made a curry syrup. Since we are already making our curry mix ourselves, I made one version without garlic powder.

Basically a Ramos Gin Fizz with armagnac

Instead of straying too far from the beaten path, I just replaced the gin from the original recipe. On top of that, I also switched out the simple syrup with my curry powder syrup. Usually, I would use Aqua Faba in a cocktail calling for egg white. Just because it is easier to handle and I do not have to waste an egg yolk. Yet, in this drink I really used a fresh, organic egg.

Because the Night:

6 cl Sumach Infused Domain le Basque Armagnac*
1,5 cl Lemon Juice
1,5 cl Lime Juice
2 cl Curry Syrup**
1,5 cl Organic Heavy Cream
1,5 cl Organic Egg White
Top off with Soda Water
Shake with ice – strain – second shaker without ice – fill – chilled tall glass;
Garnish: No garnish;

*Infuse two teaspoons Sumach in 60 ml Armagnac for three days – strain – bottle in clean bottle;

**Mix curcuma, coriander seeds, mustard seeds, fenugreek seeds, cayenne pepper, ginger powder, fennel, cinnamon, and galangal powder in a blender – blend until powdery consistency – make a 2:1 simple syrup – add the curry powder when sugar is dissolved – filter through fine mesh strainer – bottle in clean bottle;

The “Because the Night” really showcases the combination of spices. Obviously, you get a lot of curry notes, but without the umami flavour, but the Sumach also shines through. Since, I kept everything else original the egg white and the cream lend the cocktail their silky mouthfeel. All in all, the drink was very delicious and something different at the same time.
