Bee’s Knee’s Week ’22 – Barr Hill Gin
Right after Negroni Week, there comes another week honouring a great gin cocktail: Bee’s Knees Week. Bar Hill Gin started this in 2017 and it is also a sustainability initiative. For each post with the hashtag #beeskneesweek Caledonian Spirits will plant one square foot of bee habitat.
Since we visited the Caledonian Spirits distillery in Montpelier, in June, I thought this would be a great chance to mix up the classic Bee’s Knees with their gin. I only had one small 5 cl bottle, but it was just enough for the drink.
Great way to use honey
Barr Hill adds honey after distillation of their corn spirit with juniper to their regular gin. As the folks at Barr Hill Gin told use, you could almost say that their gin has hundreds of different botanicals from all the different natural substances in the honey.
2,25 cl Lemon juice
1,5 cl Honey Mix (2:1)

The Bee’s Knees with the Barr Hill Gin is very balanced with a nice combination of honey and lemon notes. The gin adds nice layers of juniper and further enhances the honey flavours in the drink.
