White Sands – Casa Eva Licor de Fonol

Even when visiting the Casa Eva for the first time in 2024, I knew that I had to mix drinks with Stefan’s fennel liqueur. So, I used the Vieux Carré as a base of some sorts for this drink.

For his Licor de Fonol Stefan Winterling uses a base spirit of wild anise and fennel seeds. On top of that, s sprig of wild fennel is macerated directly in the bottle. In the end, the liqueur has an ABV of 28 %.

Anise and fennel

Obviously, the first taste clearly reminds you of fennel. On top of that, I got a bit of anise seed as well as a touch of earthy notes. It reminded me a bit of a high quality pastis.

A whiff of Vieux Carré

I started with the classic Vieux Carré for a drink with the Licor de Fonol. However, I switched out the Benedictine for the fennel liqueur. On top of that, I only used brandy instead of the combination of rye and cognac.

3 cl Torres 15 Brandy
3 cl Casa Eva Wermut
0,75 cl Casa Eva Fennel Liquor
2 Dashes Scrappy’s Seville Orange Bitters
Stir – strain – chilled Old-Fashioned glass over ice cubes;
Garnish: Lemon Twist;
Song: Tommy Guerrero – White Sands;

The drink begins with beautiful notes of anise and fennel. The brandy and vermouth together reminded me of a Harvard cocktail. On top of that, the orange bitters
