Distillery Visit – Casa Eva

This year was our second visit to Mallorca for summer holidays. Since we had such a great time last year, we also visited Stefan Winterling at his Casa Eva distillery again. I was especially curious, because he had just launched a vermouth.

The Casa Eva Vermouth uses a Mallorcan base wine from Binigrau. Stefan uses eau de vies from carob, olives, oranges, pine, rosemary and thyme to fortify the base. The only botanicals he macerates are wormwood and gentian. In the end he adds sugar to make it a sweet vermouth. Yet, Stefan wants to experiment with grape must in one of his next batches.
Great Spanish style vermouth

I enjoyed Stefan’s vermouth very much. For me, it is a typical ‘Spanish’ vermouth, that means that it is more aromatic and powerful than the Italian counterparts. The Casa Eva Vermut still has a lot of fresh wine notes with a certain sweetness. On top of that, the wormwood comes through beautifully with fresh herbal notes. The vermouth is bitter, but for me it is very well balanced. In the aftertaste, some iconic Gin Eva orange flavours shine through, too.
Of regional liqueurs

Apart from the vermouth, we also tried the Casa Eva liqueurs again. The Limoncello as well as the Arancello have just excellent fresh citrus flavours. Additionally, there is just a shipload of essential oils on your palate. Stefan’s red bitter uses natural carmine as a colour and works perfectly in a Negroni with his Gin Eva and the new vermouth.
How about a carob liqueur?
Last but not least, we also tried a carob liqueur which Casa Eva exclusively produces for a Hotel on Mallorca. It was quite interesting to taste, because when do you get to taste carob in a spirit? – Actually, my wife came up with the best description for it: It taste like a Williams pear eau de vie with a fruit extract in it.
