Leif Erikson – Wilhelm Marx Trufo
Truffles are always a delight. However, the truffle flavour is hard to incorporate into drinks. So, I was very delighted to see that Wilhelm Marx created a whole line of truffle flavoured spirits. For this line, they partnered up with Trufo from Switzerland to create a truffle gin, a truffle raspberry spirit as well as two truffle liqueurs. Today, we will take a closer look at Wilhelm Marx’s truffle liqueur.
For their truffle liqueur, Wilhelm Marx use fresh black summer truffles. Wilhelm Marx and his wife Birgit only use natural ingredients without the addition of flavours and colourings. In the end, the Trufo truffle liqueur is bottled at 20 % ABV.
Fresh baked bread
The Trufo truffle liqueur starts with a strong and intriguing bread note. Additionally, you can taste some citrus notes reminding me of lemon peel. The truffle taste is noticeable, but a bit restrained. On top of that, the liqueur is quite mellow. I guess it could even use a bit more ABV.
Bread forward Boulevardier
For a cocktail, I decided to use the truffle liqueur in a Boulevardier / Negroni variation. However, for the base spirit I used an organic Aquavit from the Feingeisterei. Obviously, the drink had to include Campari and for the sweet vermouth I used the Gölles Rosso. In the end, I added a few dashes of Bittermen’s Transatlantic Bitters.
2,25 cl Marx Truffle Liqueur
2,25 cl Campari
3 cl Gölles Sweet Vermouth
Stir – strain – chilled Cocktail glass;
Garnish: Dried Orange Wheel Song: Interpol – Leif Erikson;
The “Leif Erikson” starts with a combination of spices from the aquavit and the truffle liqueur. Additionally, the Campari and the bitters bring some bitterness to the mix. Furthermore, the sweet vermouth balances out the other powerful flavours. All in all, the drink is quite balanced with a slight citrus note. This makes the drink perfect for the colder days of the year.
