Rest My Chemistry – Rest & Be Thankful MM

We are continuing with another colourful and tropical cocktail! This time I played around with a new, funky Jamaica rum from independent bottler Rest & Be Thankful. As for the cocktail, I am working through my backlog of cocktail ideas. As it turned out I had a nice combination with unaged Armagnac on hand.

The Rest & Be Thankful rum comes from the Clarendon Distillery with an ester level between 145 g / hl and 150 g / hl. The folks from the independent bottler use 24 barrels distilled in 2012 for their small barrel Monymusk rum. They age the rum partly in Jamaica and in Scotland and bottle them without colouring, chill-filtration or the addition of sugar.

Well integrated ester notes

Rest & Be Thankful Monymusk rum https://www.restandbethankfulcompany.com/small-batch-rum-9-years, you instantly know that you are drinking a Jamaica rum. Apart from those ester notes you can find a lot of overripe fruit notes. Additionally, I noticed some dark cherry flavours and a slight smokiness. The rum is not as powerful as other ester heavy Jamaica rums, but at the same time it also does not hide its provenance.

Swedish punch and green tea powder

Swedish Punch for this years tropical month. Somehow, I wanted to come up with a Punch style drink and added Kabuse tea which is similar to Matcha, but stronger. Furthermore, I split the base with some unaged Armagnac, because it is just an amazing cocktail ingredient.

1,5 cl Rest & Be Thankful Monymusk 2012 Rum
2,25 cl Homemade Swedish Punch
4,5 cl Cold Kabuse Tea
4,5 cl Pineapple Juice
2,25 cl Lemon Juice
2,25 cl Simple Syrup
Shake – strain – tropical glass over ice cubes;
Garnish: Lemon Twist;

When sipping the “Rest My Chemistry” you instantly notice the Jamaica rum and the green tea. However, both flavours are well incorporated with subtle grape notes from the Armagnac. The pineapple juice also adds a nice exotic layer, balanced by the sweet and sour mix.
