Steal My Sunshine – Magnifica Extra Premium

If there is a spirit I am regularly neglecting here on the blog, it is Cachaça. To change that, I gave the Magnifica Extra Premium a try. On top of that, I came up with an Old-Fashioned variation which was really delicious. Although probably no one else can recreate it…

The Magnifica Extra Premium obviously is distilled from fresh sugarcane juice. However, after distillation the spirit spends a year in traditional casks from Ipê wood. Next, Magnifica transfers the cachaca to American oak barrels for at least another three years of ageing.

Traditional wood notes

The Magnifica Extra Premium starts with typical Cachaça notes of fresh sugarcane. However, soon notes from the barrel ageing take over. You can find a lot of vanilla and cinnamon notes in the taste. Yet, there are also some menthol notes and a bunch of umami flavours reminding me of lovage, but in a good way.

Never to be recreated

I already have the reputation of mixing drinks that no one can recreate anyway. Therefore, I decided to full embrace that spirit and got out one of my rarest bottles of rum. So, I split the base between the Plantation Guadeloupe Rhum finished in Calvados Casks and the Magnifica Cachaça. Top that with an intriguing mix of bitters and splash of mezcal and you have a rather good Old-Fashioned variation.

3 cl Magnifica Extra Premium Cachaça
3 cl Plantation Guadeloupe Calvados Cask Rhum
2 Dashes Honest John Bitters Coffee & Cherry Bitters
4 Sprays The Seventh Sense Old-Fashioned Bitters
0,75 cl Moscovado Simple Syrup
Spray Glass with Topanito Tobala Mezcal
Stir – strain – chilled Double Old-Fashioned glass over ice balls;
Garnish: Lemon Twist;
Song: Portugal. The Man – Novocaine for The Soul;

First, you can taste the barrel aged notes of the rhum and the cachaca. Soon afterwards, a slight sweetness takes over, paired with spicy notes and a hint of coffee All in all, the “Stealing my Sunshine” is quite the elaborate Old-Fashioned variation with layers of flavours to discover.
