Dry January 2024 – Saints Preservus

Last, but not least, I am featuring a non-alcoholic cocktail I came up with last year, but only got around to try now. The drink features some trending ingredients and also sticks to the theme of this year’s Dry January – tea.

I built the drink around Greek mountain herb tea, which as it turns out is featured in high-quality tea shops now. Basically, I created a Fizz style cocktail with Aqua Faba as a foamer. Yet, I replaced the plain soda water with high quality lemonade.

Preserved lemons

At the last minute, I switched from a combination of lemon and lime juice to just lime and a barspoon of preserved lemon. I simply ran out of lemons and thought the salinity of the fermented lemon would work great in the cocktail.

Youth:

5 cl Cold Greek Mountain Tea
1,5 cl Lime Juice
2,25 cl Honey Mix
1,5 cl Aqua Faba
1 Bsp. Preserved Lemons
Top off with Frizz Lemonade
Shake – strain – chilled Highball glass over ice cubes – top off;
Garnish: No Garnish;
Song: Daughter – Youth;

At first the ‘Youth’ tastes like high-quality bitter lemon. Yet, after a short while the herbal notes of the tea and a slightly salty taste develop. The Aqua Faba leaves an almost buttery mouthfeel. All in all, the drink goes down very easy, even for a non-alcoholic drink.
