Child Prodigy – Cava de Oro Plata

I thought I would make it a hat trick and write about the third tequila drink in a row. This time it is all about a great blanco tequila in combination with White Negroni variation. With a little extra in the form of a strawberry pepper bitters.

The Cava de Oro Blanco comes from Amatitan, Jalisco and has the NOM #1477. The Partida family produces the blanco by cooking the agaves in brick ovens before fermenting them in stainless steel vats. Furthermore, the mash is distilled twice in stainless steel stills. In the end, the Cava de Oro is bottled at 40 % ABV.

Balanced agave and white chocolate

The Cava de Oro Plata starts with typical fruity notes of agaves. However, after a short while more mineral notes take over. Just before you can find some citrus notes in the taste. On top of that, there are floral notes, exotic fruits and just a touch of white chocolate. All in all, the Plata is one of the most balanced tequilas I had so far!

Another Agavoni variation

Last time, I left you with a strange Amaro based Negroni variation. Even if this drink falls into the same drinks category the taste could not have been more different. The whole idea started with the Martini Inmadura from my friend Johan over at Cocktailbart.de. So, I thought the only thing missing from the recipe was some gentian liqueur to make it a “White Negroni Inmadura”. Obviously, I also changed the gin to tequila. Furthermore, I also took my new Ms Better. Green Strawberry Mah Kwan Bitters for a spin.

3 cl Cava de Oro Plata Tequila%
2,25 cl Ciane Gentian Liqueur
2,25 cl Rinomato Americano
2 Dashes Ms Better Green Strawberry Mah Kwan Bitters
2,25 cl Loimer Verjus
Stir – strain – chilled Old-Fashioned glass over ice cubes;
Garnish: Lemon Twist;
Song: Yeasayer – Child Prodigy;

I do not know if it was the bitters or the tequila, but something almost balanced out the bitterness of the gentian liqueur almost completely. Instead, there was this balanced, almost Milk Punch like, fruity taste which reminded me of strawberries and agaves. Furthermore, you can find some slight gentian root notes paired with hints of spices and wine. The lemon peel really helps bringing out the other flavours and adding a slight freshness
