Sacred – Chairman’s Reserve Master’s Selection Coffey Still

I did enjoy the Chairman’s Reserve bottlings I tried so far. This is why I was especially curious to try the Master’s Selection limited German release, too. Apart from that, I was inspired by a song to come up with a recipe which highlights the character of the rum.

The Master’s Selection Coffey Still was distilled in 2011 on the namesake still. The rum spent nine years in barrels which previously held bourbon. Afterwards, the rum was bottled at an ABV of 46,2 % without the addition of sugar.
A lot of oak

The Master’s Selection starts with a bunch of coconut flavours. Next, you can find a combination of molasses, caramel as well as spices. On top of that, you will notice a lot of oak spices and tannins on the palate. Adding a bit of water will pronounce the tannins quite a bit more.
Basically, an Old-Fashioned

I got the idea to add a splash of elderberry eau de vie to an Old-Fashioned cocktail with the Chairman’s Reserve rum through the song ‘Sacred’ by Elder Island. On top of that, I also was inspired by Fredrik Yarm’s Sacred Monkey Forest cocktail. So, I decided to add a tiny amount of Fernet del Frate which also was a nice hint at the drink’s name. I also took over the chocolate bitters which always work perfectly with rum.

0,75 cl Salted Demerara Syrup

Yes, the ‘Sacred’ basically tastes like a Rum Old-Fashioned. However, the eau de vie as well as the Fernet add to the complexity of the drink. Especially, the wild fruit eau de vie works perfectly with the rum. Furthermore, the herbal note serves as a nice contrast. I enjoyed the cocktail very much and definitely will be making it again.
