Remixed! – The Drunken Dodo

The Drunken Dodo was the cocktail I initially planned on mixing with the Plantation Trinidad Rum. It was on my ‘to mix’ list as long as I created a variation of it, I called ‘The Season’. So without further ado here it is!

I really enjoyed my variation of the drink. There is just something about the combination of well-aged rum and Allspice Dram. So, I was curious how the original would compare. Apart from that, I use my homemade Allspice Dram way too rarely.

A lot of allspice

The original recipe called for Scarlet Ibis Rum, which is not available in Germany. So, I went for the Plantation Trinidad. Since, my homemade allspice dram is quite potent, I probably should have adapted the recipe accordingly. For the homemade liqueur, I combine 200 g of allspice berries, a cinnamon stick with 100 ml overproof rum and let it rest for a few weeks. Just filter everything and add 200 g of sugar per litre.

6 cl Planatation Trinidad 8 Years
2,25 cl Sweet Vermouth
0,75 cl Allspice Dram
2 Dashes Angostura Bitters
Stir – strain – chilled Cocktail glass;
Garnish: Dried Orange Wheel (Orange Twist);
Song: The Dodos – The Season;

Right from the first sip, the allspice dram introduces itself to your palate. I know my homemade version is a bit more potent than the bought version. Either way, I would go with just two barspoons the next time. Apart from that, the Drunken Dodo is a great tropical Manhattan twist.
