Golden Sky – Gin Eva L’Horabaixa
Ever since our visit to Casa Eva in Mallorca this year, I was thinking about their newest gin the L’Horabaixa. It was one of the few new gins that was able to impress me. So, I am very happy that Stefan send me a bottle and I could try the recipe I pitched to him at our visit. Basically, it is a Gin Fizz variation with the addition of mandarin curaçao.
L’Horabaixa means ‘the golden hour’ in Mallorquin dialect. The gin uses a combination of juniper, lemons from the Sóller valley and thyme from the finca Hertitx. Stefan made this gin to be paired with tonic water. It is bottled at an ABV of 45 %.
Citrus, juniper and herbs
The L’Horabaixa might just be the most classic tasting gin from the Gin Eva portfolio. Yes, you can still find prominent citrus notes, but the juniper and thyme take the gin in a slightly different direction. This still is very mediterranean taste-wise, but miles away from tasting only of herbs. For me, the juniper develops a backing spice flavour I enjoy very much in gins.
Basic recipe, at least for me
To counter my reputation that I only come up with drinks you cannot remix at home, I used the L’Horabaixa in a rather simplistic recipe. I actually came up with it when Stefan asked me what I would use the gin in. I first thought of a Gin Fizz variation. Apart from that, I only added the mandarin curaçao from Casa Eva as well as some optional coriander bitters.
1,5 cl Gin Eva Mandarin Liqueur
2 Dashes Bob’s Coriander Bitters
3 cl Lemon Juice
0,75 cl Simple Syrup
Spray chilled Cocktail glass with absinth – shake – strain – prepared glass;
Garnish: No garnish;

The ‘Golden Sky’ starts like your typical Gin Fizz with the combination of lemon and juniper. Yet, the mandarin flavours shine through and perfectly match the lemon flavours. The coriander bitters only linger on in the back of the taste and add to the complexity, but I guess you could even omit them. All in all, this is a great refresher and really takes me back to the summer on Mallorca!
