I Appear Missing – Pomatium Gin

The Pomatium Gin comes from the Domaine du Coquerel which usually produces Calvados. Since, it is apple and pear flavoured, it seemed like a perfect fit to pair with a lilac syrup.

Coquerel uses French wheat as a base for the spirit. Furthermore, they included eight botanicals for their Pomatium Gin angelica root, apples, black pepper, coriander, juinper, lemon, pears and yuzu in the recipe. The gin is produced on the same small copper stills where the Domaine produces their calavdos. In the end, the gin is bottled at an ABV of 42,3 %.
A lot of green apples

At first, I was quite overwhelmed by the green apple flavour of the Pomatium Gin. It almost reminded me of an apple korn. Next you get some juniper as well as hot ginger. On top of that, I found a noticeable menthol flavour as well as some black pepper in the taste..
Lilac sour, New York style
I had lilac syrup on hand for a while now, but did not know how to use it. Since, lilacs were blossoming here a few weeks ago, I got the idea to use it in combination with the Pomatium gin. Apart from that, I also added a blueberry liqueur as well as a red wine float.

0,75 cl Lantenhammer Blueberry Liqueur
3 cl Lemon Juice
1,5 cl Blütensekt Manufaktur Lilac Syrup
3 cl Aqua Faba or Egg White
Float 3 cl Beaujolais Red Wine

The “I Appear Missing” starts with a nice combination of red wine and sour notes. Next, the gin with its apple flavours shines through. The blueberry liqueur and the lilac syrup balance out the acidity and also add depth to the drink. This just seems like the perfect fit for late spring / early summer.
