Wild Stare – Eversbusch mit Kaffee
I already featured the different Eversbusch Doppelwachholders here on the blog. However, Peter Eversbusch always is in search of new products. This time, he infused his regular juniper spirit with craft coffee from a local coffee roaster. Since I am always up for coffee flavoured spirits I was looking forward to trying it.
The Eversbusch Doppelwachholder mit Kaffee as it is called in German, uses the standard juniper spirit with an ABV of 46 %. Espresso beans from Max Bean in Ennepetal macerate in the finished Doppelwachholder. Peter Eversbusch uses the “maxchoc” coffee a blend of 100% Arabica espresso, from Guatemala (70%) and Brazil (30%). The beans are harvested in the Antigua / Guaxupé and Minas Gerais regions. Afterwards, the growers was some of the beans while others remain natural. The varieties are Bourbon, Caturra, Catuai, Mundo Novo, Tupi, and Rubi. The coffee grows in altitudes between 1000 m to 1700 m.
Juniper infused coffee
Obviously, you can taste a lot of coffee and juniper notes with the Eversbusch. Yet, the notes remind me more of porta filter coffee than of espresso. Apart from that, there are a lot of earthy flavours in the Doppelwachholder with additional roasted notes. You will also find hints of vanilla and hazelnut in the aroma. All in all, it nice accompanies to the Eversbusch line-up, which probably works great in all sorts of cocktails.
Bold flavours
Since the Doppelwachholder with coffee is strongly flavoured, I thought I would pair it with other bold ingredients. So, I added Cynar which is one of my favourite Amaros. Furthermore, I again used Matthias Soberon’s Ango Ximenez “Bitters”. This mix of Angostura Bitters with Pedro Ximenez really works wonders in drinks. To take the cocktail more towards a Smash than a Sour I also added a mint sprig.
3 cl Cynar
3 Dashes Ango Ximenez
2,25 cl Lemon Juice
1,5 cl Simple Syrup
Shake – strain – chilled Double Old-Fashioned glass over ice cubes;
Garnish: Lemon Twist and Doppelwachholder Chocolate;
Song: Giant Rooks – Wild Stare;
The “Wild Eyes” starts with a combination of coffee and Cynar notes. However, the bitterness of the Amaro is kept at bay by the other ingredients. The sherry and bitters mix adds some nice dark, dried fruit notes while the lemon juice contributes enough acidity. This makes the drink a great summer refresher which should be enjoyed on hot summer evenings on your balcony or terrace!
