Bramble – Boudier Crème de Mûre

The Bramble is an excellent modern classic cocktail which also is a crowd pleaser. However, I until now I never had a blackberry liqueur on hand. While the drink also works with cassis or other berry liqueurs, there is only one original. In this case, I got my hands on the Creme de Mure from Gabriel Boudier and started to mix up the drink with two different gins.

For their Crème de Mûre Gabriel Boudier use wild blackberries. A lot of natural berries from Chile and Morocco are macerated in neutral grain alcohol with an ABV of 30 %. Afterwards, they are blended with sugar. Since, the liqueur is a crème liqueur, it contains more than 250 g per litre sugar.

The Boudier has a typical berry flavour. It ranges from blackberries to blackcurrants. Obviously, you get a strong sweetness, but this is kind of the point of the liqueur. Apart from that, you can taste a slight menthol note in addition to hints of caramel and spices.

The classic Bramble

There is not much to say about the Bramble. It was created in the 80s by Dick Bradsel at Fred’s Club in SoHo, London. He wanted to create an easy sour reminiscent of England and blackberry picking on the Isle of Wight. In this case, I used the Nolet’s Silver Dry Gin, because I thought its raspberry and rose note would pair great with the blackberry liqueur. However, I also mixed one up with the Quarantini Social Dry Gin to see how its papaya flavour would turn out in the drink.

Bramble:

6 cl Nolet’s Silver Dry Gin
3 cl Lemon Juice
1,5 cl Simple Syrup
Float 3 cl Gabriel Boudier Crème de Mûre
Shake first three ingredients over ice – strain Double Old-Fashioned glass over crushed ice;
Garnish: Dried Lemon Wheel;

Well, both Brambles are quite tasty. However, I don’t know why in my last few tries the liqueur did not float and instead sank to the ground of the drink instantly. Nevertheless, the one with the Nolet’s Silver Dry Gin was more balanced and the flavours worked better with the Boudier Crème de Mûre. Yet, the Quarantini also resulted in a delicious drink with a lot of fruit flavours. The drink still has an intense papaya note which makes the flavour profile a bit more complex.
