Bitter Dancer – Eversbusch Jamaica Barrel

Peter Eversbusch is a benchmark for the German juniper spirits scene. Not only does he continue the legacy of his family run distillery, but he also finds new and innovative ways to come up with new spirits. In this case, we take a look at Peter’s newest product the Jamaica rum barrel aged Wachholder.

The Eversbusch Doppelwachholder aged in a Jamaica Rum barrel is based on the regular Doppelwachholder. Peter just finishes the the juniper spirit for a few months in a barrel which previously held Jamaica rum for nearly ten years. In the end, the Wachholder ist bottled at an ABV of 47,5 %.

Juniper and a lot of citrus notes

First, of course the Eversbusch Doppelwachholder tastes of juniper. However, the rum flavour is rather subdued. Instead, you can notice a strong citrus flavour reminding me of fresh lemons and lemon peel. It is tasty and I especially like the complexity of flavour which comes from this “single botanical” gin.

A bitter Gin Mai Tai

Besides the Jungle Bird, the Bitter Mai Tai was a really big deal in the Drinkstagram world in 2020. So, I took this as a base for my “Bitter Dancer” drink using the Eversbusch Doppelwachholder aged in a Jamaica Rum barrel. However, I changed the ratio to get more of the juniper spirit’s taste.

4,5 cl Eversbusch Doppelwachholder Jamaica Rum Barrel Aged
2,25 cl Campari 28,5 %
0,75 cl Pierre Ferrand Orange Curacao
2 Dashes Creole Bitters Mix*
3 cl Lime Juice
1,2 cl Meneau Orgeat
0,75 cl Maple Syrup
Shake – strain – Double Old-Fashioned glass over ice cubes;
Garnish: Lime Twist;
Song: Fleet Foxes – The Plains / Bitter Dancer;

 

*Mix 50 % Peychaud’s Bitters and 50 % The Bitter Truth Creole Bitters – bottle in clean dripper bottle

Obviously, the “Bitter Dancer” starts with a pronounced bitter note from the Campari. However, after a while the sweet and sour mix of the orgeat and the limes take over. The Doppelwachholder also shines through with its juniper, but blends in perfectly through its lemon notes.
