Aeroplane Blues – Drinksyndikat Port Cask

Here is a drink with a new rum from Drinksyndikat. Actually, the rum itself is not at all new, but instead was marked by Wagemut before. Drinksyndikat basically adopted the recipe from Nicolas Kroeger. For the cocktail I went for a Paper Plane variation.

The Port Cask Rumcomes as a blend of eight, 13 and 18 year-old Panama rum. Then the rum gets a finish in freshly emptied and still wet Tawny port casks. In the end, the rum based spirit is bottled with an ABV of 42,1 %.

Port fruit explosion

Obviously, the rum has a lot of dried fruit notes. On top of that, the rum even reminded me of a fortified wine. Apart from that, you can also find a lot of spices with hints of allspice, macis and nutmeg. There definitely is a noticeable sweetness in the spirit.

Bitter, but balanced

For a drink with the Port Cask Rum, I went for a Paper Plane variation. Yes, I know not the obvious choice, but I just thought the rum might work as a great replacement for bourbon. Furthermore, I used the rather new Etna Aperitif and a rather unkown Amaro from the Enoteca Corsetti.

3 cl Enoteca Corsetti Amarognolo
3 cl Lemon Juice
Shake – strain – chilled cocktail glass;
Garnish: Lemon Twist (no drop);
Song: The Black Keys – Aeroplane Blues;

The “Aeroplane Blues” starts with herbal notes with a balanced bitterness. The rum also shines through and adds to the complexity of the drink. The Aperitivo and the Amaro work perfectly well with the rum and sweet and sour base. Therefore, the cocktail tastes like more than the pure list of ingredients might suggest.

      I think it will. The Paperplane template works with a great number of Aperitif / Amaro combinations.
