Day by Day – Scheibel Nussler

It has been a long time since I made an Old-Fashioned variation. So, I thought I give it a try when reviewing a barrel aged walnut eau de vie. On top of that, I also have a great value-for-money rum from Barbados.

Scheibel uses walnuts from the Kaschmir region in their eau de vie. They grate the walnuts and macerate them in neutral grain spirit. After a few months the macerate is distilled on Scheibel’s “Neue Zeit” still and aged in 350 l oak casks. The eau de vie spends eight to twelve months in the barrels and Scheibel bottles it with an ABV of 40 %.

Caramelized walnuts

You first get a clear walnut flavour from the Scheibel Nussler and a lot of cereal notes. Afterwards, some roasted flavours come to the front. Furthermore, there also are some dried fruits and caramel notes. All in all, the walnut eau de vie delivers all you can expect from a nut eau de vie with some additional barrel ageing flavours.

Great Foursquare Rum for the price

The R. L. Seale 10 Years comes from the Foursquare Distillery in Barbados. Richard Seale ages the rum at least for 10 years in small oak barrels before blending. You have to make sure to get the 46 % ABV version though! Oh, and the rather eccentric bottle is supposed to look like a leather flask which Captains used on boats.

Basically, a Rum Old-Fashioned

It just felt right to pair the walnut eau de vie up with a Rum Old-Fashioned variation. However, the really special part of this drink is the combination of bitters. Yes, regular Angostura Bitters would be fine here, too. However, I tailored the flavours to go well with the split base. Furthermore, I also used whiskey barrel aged maple syrup as the sweetner.

First, you notice a great combination of rum and walnuts. Next, the spies from the bitters take over with notes of cinnamon and cloves. Underneath it all lies the sweetness of the maple syrup. Yes, the “Day by Day” tastes like a Rum Old-Fashioned, but at the same time also has more to offer.
