Potion Approaching – Bozal Ensamble

This is the second White Negroni variation in a short time. However, I cannot remember that I ever made a Mezcal Negroni variation. So, to change that, I came up with this aloe enhanced recipe.

The Bozal EnsambleI used for the ‘Potion Approaching’ mixes Espadin, wild Mexicano and wild Barril agaves. The production takes place in the village of Miahuatlán y Etla, Oaxaca. During the production traditional methods are used and the mezcal is distilled on copper pot stills. In the end, the Bozal has an ABV of 47 %.

Some smoke and minerals

Obviously, you get certain smoke notes when tasting the Bozal Ensamble. Yet, the fruitiness of the agaves, as well as the minerality of the terroir are clearly noticeable. Due to its ABV, the mezcal has a some power and menthol notes, but this also makes it ideal for mixing.

Just your average Agave Negroni

Yes, I could have only used the Bozal mezcal, but I thought I would split the base with the Pasote Añejo. Furthermore, I went a bit wild concerning the bitters. The combination of Bob’s Cardamom Bitters and Ms Better Bitters Pineapple Star Anise just worked perfectly here. For a gentian liqueur I used the one from Chartreuse and to round everything off I added a splash of aloe vera juice (surprisingly bitter!).

2,25 cl Pasote Añejo Tequila
2,25 cl Bozal Ensamble Mezcal
1 Dash Bob’s Cardamom Bitters
1 Dash Ms Better Bitters Pineapple Star Anise Bitters
2,25 cl Chartreuse Gentiane Liqueur
2,25 cl Gölles Semi-Dry Vermouth
2,25 cl Organic Aloe Vera Juice
Stir – strain – chilled Old-Fashioned glass over ice – top off;
Garnish: Lime Twist;

The drink starts with a combination of gentian liqueur and smoke. Yet, soon afterwards the pineapple notes take over and blend nicely into the agave flavours. As mentioned above, the aloe vera juice enhances the bitterness of the drink, but at the same time lends a nice mouthfeel.
