Pantsy Waltz – Weyermann Doppelwacholder

What should you mix, when you have a juniper spirit on hand? Obviously, I had to come up with a Hanky Panky variation. Especially, when I also had a herbal liqueur from the same distillery on hand.

Weyermann distill their Doppelwacholder from high-quality juniper berries. This basically makes this traditional German spirit a single botanical gin. After distillation on a copper pot still the spirit is bottled at an ABV of 38 %.

Typical juniper notes

When sipping the Doppelwacholder, you are instantly reminded of a gin. At first you can find citrus and juniper. After a while, resinous notes develop with hints of forest. Yes, you can also find some menthol notes, but it still is well integrated.

Just riffing on a classic

I really love the Hanky Panky. It is a rather unkown gin cocktail, but it does hit all the right spots for me. So, with a new Doppelwacholder, I just went for this classic cocktail. Yet, I also replaced the Fernet with some herbal liqueur also produced from Weyermann.

Pantsy Waltz:

4,5 cl Weyermann Doppelwacholder
3 cl Mancino Rosso Vermouth
0,75 cl Weyermann Digestive Bitters
2 Dashes Angostura Bitters
Stir – strain – chilled Cocktail glass;

The ‘Pantsy Waltz’ really reminds me of the Hanky Panky. Yet, the drink is smoother through the herbal bitter instead of Fernet. Through the Doppelwacholder the usual citrus notes are taken out of the equation. This lets the vermouth shine more.
