Hymnostic – Ode Ruby Wood

When you have an open bottle of champagne in our fridge it is best to use it in a sparkling wine cocktail! So, this is exactly what I did. On top of that, I combined it with the natural red aperitif from Ode.
Similar to its bright counterpart, the Ode Ruby Wood uses a Riesling as a base. On top of that, the recipe combines bitter oranges, cinchona, gentian, hibiscus, oranges, quinquina, sandalwood as well as vanilla. It is bottled at an ABV of 18,5 %.
Gentian and cinchona
The Ode Ruby Red starts with a pronounced bitterness reminding me of gentian root, cinchona as well as wormwood. However, afterwards you get a touch of oranges before some herbal notes take over. I did enjoy this aperitif very much, too!
Dark bird
I based the cocktail with the Ruby Wood very loosely on the Nachtvogel. Basically, I took the combination of port wine, champagne as well as bitters and switched out the Scotch for the aperitif liqueur.

Top off with Champagne
Built – chilled Champagne glass over ice cube – top off with Champagne;
Garnish: Lemon Twist (no drop);

The Hymnostic starts with a combination of wine notes, bitterness and sweetness. After a while the acidity of the champagne shines through while the herbal and woody flavours of the Ode emerge. All in all, this is not necessarily an easy summer sipper, but instead can be enjoyed on the colder days leaning into autumn, too!
