AB Rum Barrel ’22 – Chairman’s Legacy

Sometimes you have to revisit old drinks you created! In this case, I went back to my signature Augustine-Bar Rum Barrel recipe and gave it an update. Additionally, I can use the chance to present a rum from Saint Lucia to you!

I quite enjoy rum from Chairman’s Reserve. This time I am presenting their Legacy bottling to you. The rum was created to commemorate Chairman’s Reserve founder Laurie Barnard. In contrast to other bottlings, the rum consists of a blend of molasses and sugarcane juice based spirits. Furthermore, Chairman’s Reserve distils the sugarcane mashes on John Dore Pot, Vêndome Pot and Coffey Stills. All in all, the rum spends five to seven years in barrels and is bottled at an ABV of 43 %.

Backing spices

There is a certain note that comes with Chairman’s Reserve Rums. In addition to the molasses and sugarcane notes, you can taste quite a lot of spices. There are cinnamon, allspice and nutmeg. Furthermore, you will also find some coconut shavings and a whiff of tannins. All in all, it is quite complex and you should definitely check it out.

Slight changes and updates

Basically, I updated the rum mix of my original recipe. Instead of 2 oz Plantation 3 Stars I went for a split base of the Chairman’s Reserve Legacy and the Plantation Isle of Fiji. Additionally, I also used the excellent overproof Plantation O.F.T.D. Furthermore, I used Amaro Meletti instead of the Amaro di Angostura.

1,5 cl Plantation O.F.T.D. Rum
0,75 cl Alde Gott Cherry Eau de Vie
0,75 cl Meletti Amaro
1 Bsp. Homemade Pimento Dram
2 Dashes Amer Kebek Walnut Bitters
2 Dashes Dashfire Chai Bitters
4,5 cl Pineapple Juice
3 cl Lime Juice
1 Bsp. d’Arbo Grenadine
1 Bsp. Dark Moscovado Syrup
Shake – strain – tropical mug over crushed ice – top with more ice;
Garnish: Spent Lime Half – Orange Oil – Fire – Cinnamon;
Song: Augustines – Cruel City;

Obviously, the drink is quite powerful! Yet all the ingredients are very well integrated in the finished drink. You especially can taste the O.F.T.D.’s notes and some funky ester flavours from the Plantation Fiji. The cherry eau de vie and the amaro, as well as the Pimento Dram have supporting characters, but play them very well.
