Hijo del Mar – Casa Eva Aperitiu

I guess it comes with the job, that when you have a reputation for creating great spirits, people request certain things. In this case, bars and restaurants on Mallorca asked Casa Eva for an aperitif liqueur. So they obliged.

For the Aperitiu, Casa Eva uses a combination of citrus eau de vies, gentian as well as rhubarb root and colourings. In the end, the Aperitif has an ABV of 15 % and is bottled in a litre bottle.

Easy sipping aperitif

Right away you can sense the gentian in the Aperitiu. However, it is quickly accompanied by citrus peel, especially lemon as well as orange. Beneath that, there is an earthy flavour from the gentian, but also a bit more complex and darker. I also found a certain perfumed flavour towards the end of the taste.

Child of the sea

Lately, I am a bit into simple servings, at least for my standards. In this case, I added Verjus to the aperitif liqueur. The most ‘intricate’ ingredient are a few drops of saline solution. In the end, I topped everything up with soda water.

Hijo del Mar:

6 Drops Saline Solution
Top off with Soda Water
Built – chilled Old-Fashioned glass over ice cubes – top off;
Garnish: Olives and Pickled Chili;

Simply put the “Hijo del Mar” is the perfect drink for hot days. It is refreshing and has a low-ABV. While at the same time it also has a nice subtle complexity to it. The Verjus adds freshness and balances out the sweetness of the Aperitif.
